Literacy in Reception

Hi, I'm hoping some of you will be able to help me or offer some ideas.
As im sure we all know, when assessing children's development our evidence should come from child initiated work.
Can anyone tell me how they set up literacy sessions in reception. Some of my colleagues are hung up on pulling children over from work time (child initiated time) to come and write sentences. It makes me CRINGE! Although I don't think I have the right answer either?
I try and scaffold children's learning if they are doing their own initiated writing such as counting the sounds they need in words etc but Senior Management want Reception children to have a "literacy day" and all write a piece of work in their literacy books! When clearly some are not yet at this stage.
